We are doing better with food! I cooked everyday last week for dinner, which is much better than usual. I spent a little the other day on fresh fruits and vegetables. 6 kiwis were only a $1! Same with a pound of strawberries and a pound of blueberries, so I couldn’t say no. They also had fresh chicken for $2 a pound, whereas normally I buy it for $6, so I stocked up.

I wanted to thank everyone again for all of the great tips on my food challenge post!

Here’s what I plan on making as our main course for each dinner:

  • Monday – Enchilada Casserole
  • Tuesday – Cheesy Basil Stuffed Chicken
  • Wednesday – BBQ Chicken
  • Thursday – BLTs
  • Friday – Steak
  • Saturday -Teriyaki Chicken
  • Sunday – Fajitas

We are STILL spending too much on food! It’s out of control. I’m just starting to get tired of cooking, I need new ideas. I also need to use the crockpot more.

I’m going out to eat on Friday for a mystery shop. I’ve mystery shopped at this restaurant before and it was really good, plus I get $100 to spend.

Here’s what I plan on making as our main course for each dinner:

  • Monday – Broccoli Fettuccine Alfredo
  • Tuesday – Bacon Wrapped Pork Chops
  • Wednesday – Spaghetti
  • Thursday – Brisket Tacos
  • Friday – Out to eat
  • Saturday – Out to eat
  • Sunday – Steak

Happy Sunday everyone! We’re still doing good with our food spending even though we probably spent a little too much last week. We really need to start eating the things we already have in our fridge. Our fridge is packed full of food but lately we’ve never been hungry for anything in it.

Last week I said that I was going to try sticky wings again, and for some reason they turned out DISGUSTING again! Some of you also said that you tried making something similar as well and it never turns out right. So if there are any wing making pros out there, please share your expertise  🙂

Here’s what I plan on making as our main course for each dinner:

  • Monday – Taco Soup
  • Tuesday – Spaghetti
  • Wednesday – Pesto Chicken and Pasta
  • Thursday – Steak Tacos
  • Friday – Out to eat
  • Saturday – Out to eat
  • Sunday – Steak

I spent a lot more on food then I said I was going to last week (I said only $40). Instead I spent around $110. However, I bought a ton of meat and a bunch of other things, so I guess that’s ok. And I bought enough for this weeks meal plan as well.

Still kind of scary though! How much do you usually spend on groceries a month?

Here’s what I plan on making as our main course for each dinner:

  • Monday – Chicken Parmesan Wraps. I didn’t make this last week, so it’s back on the meal plan
  • Tuesday – I’m going to try Sticky Wings again. I tried making this while ago but it turned out disgusting.
  • Wednesday – BBQ Pork with Mango Slaw
  • Thursday – Three Cheese Baked Ziti
  • Friday – Out to eat
  • Saturday – Out to eat
  • Sunday – Steak

Wow it’s already Sunday! I have a lot of homework to do, papers to write, etc. I really can’t wait until classes are over. Mainly because I will be able to actually enjoy lunches at work (right now throughout this whole semester I’ve been dedicating my hour lunch break to homework. Not fun!).

I was kind of lazy last week when it came to making dinner.  I think I probably made around 3 dinners at that’s all. I need to do better with this next week. I’m going to guess for me to be able to make the meals below (and meals for breakfast, lunch and snacks), that I’ll need to spend around $40 this week on groceries. Not bad, we have a ton of stuff in our pantry and fridge still.

Here’s what I plan on making as our main course for each dinner:

  • Monday – Chicken Parmesan Wraps
  • Tuesday – Steak
  • Wednesday – Enchiladas
  • Thursday – Sausage and Rice
  • Friday – Out to eat
  • Saturday – Out to eat
  • Sunday – Vegan Wraps (Part of me being more healthy!)

Sunday Meal Plan and My Chicken Teriyaki Recipe

Here’s what I plan on making as our main course for each dinner:

  • Monday – Lasagna
  • Tuesday – Creamy Avocado Pasta
  • Wednesday – Tacos
  • Thursday – Inside Out Pizza Pie
  • Friday – Hawaiian Chicken ( I didn’t make this so it’s staying on the menu)
  • Saturday – We’re going camping (not sure what we’re eating)
  • Sunday – Steak

And here’s my Chicken Teriyaki Recipe:

As most of you know, I’m all for simple instructions. My recipe directions will be the easiest in the world. I’m not too detailed with anything. Sorry if this is too all over the place for you.

  1. My main sauce ingredient is “La Choy Teriyaki.” This is honestly the best teriyaki sauce I’ve tried. I’ve tried buying others just to test them out, and they are usually disgusting.
  2. Then I also use soy sauce, rice vinegar sauce, and sesame oil. These 3 sauces are optional if you do not have them (no need to buy them), but I already had them so I just sprinkle a little bit to taste on each.
  3. Then I use around 2 pounds of chicken and cook all the way through.
  4. Slice 1 onion and 1 to 2 green peppers (depends on how much you like) and add to the chicken.
  5. Then add however much sauce you need. Usually 1/3 of the La Choy sauce is enough for me and then I put about 2 tablespoons each of the other sauces.
  6. Voila, there’s my easy instructions on fantastic Chicken Teriyaki.

If you want Steak Teriyaki, then obviously just substitute steak for the chicken.  Let me know how it tastes for you if you try it!

We ate out A LOT last week while on vacation. We didn’t have a stove or anything (just a small mini fridge) so we ate out for every meal. Definitely added up quickly. Eating out tastes good, but I’ve been hungry for some home made food.

Here’s what I plan on making as our main course for each dinner:

  • Monday – Pot Roast
  • Tuesday – Chicken Ropa Vieja
  • Wednesday – Chicken Teriyaki
  • Thursday – Crockpot Italian Chicken
  • Friday – Hawaiian Chicken
  • Saturday – Steak
  • Sunday – Out for dinner

Here’s the new drink that I’m going to make this week:
